Fajitas Dinner

Sixteen years in Texas and finally now back in Singapore after 10 years, I finally attempted to make this signature dish. Been back for 10 years and still cannot find any restaurant that can come close to the real TexMex Fajitas.
Started marinading the flank steak right after noon. Was not able to get hold of the regular Texas lime; so used calamansi & lemon instead. Out of ziploc bag so used the bowl instead. Would be better in the ziploc cos then the flavor will be completely sealed in. But anyhow, it still turned out awesome. Marinade with onions, cilantros, bell pepper, salt & cumin.
Finally ready for grill after chilling in marinade for about 6 hours


Did the whole enchiladas...man have not used this expression for a while! Guess for this, it is most befitting. Did guacamole, pico de gallo and Mexican rice. All from scratch. Rice is cooked with fresh tomatoes, pureed with onions. Was not able to get any avocados cos those that Daisy bought for me was not ripe yet.. Still too hard. Actually got Wes to go over to Cold Storage. But lo and behold, for reasons unknown, mum actually bought back 2 ripe avocado! She just happen to see it in the store and actully this is the first time she bought avocado!
REsults - absolutely awesome! The only missing is refried beans which we usually don't care for anyway and of course MARGARITAS!!!!. How i wish i have some tequila at home/.

i am not quilty, chuan moi chose them! :( at first i chose some and she said they are too hard, so i told her to help me....i think the whole batch of avocado there are quite the same.... :(
